When going through the piles of magazines stacked up at my parents house trying to choose a list of recipes to make during the holidays I came across the idea of chocolate mousse. I have made chocolate mousse before but not in a very long time and I do not remember the recipe I had used or even how well it had turned out. I don’t remember it being that difficult, but I couldn’t remember at all and when I thought about chocolate mousse I realized it seemed a little scary. I mean, how does it stay so fluffy, because it wouldn’t be nearly as good without the fluffiness. And what about all that chocolate? I sometimes have been known to ruin chocolate recipes by use of the double boiler. But a good chocolate mousse is so so delicious and I just decided I wanted to try chocolate mousse recipes until I got one absolutely perfect and that could be my go-to recipe for whenever I needed a delicious whisper of silken deliciousness.
This is the only one I tried so far, but Im already loving it and not too sure I need to try others. I literally just made a plain chocolate mousse using bittersweet chocolate. The recipe did call for some espresso also but I didn’t have any and didn’t feel like making any so I just didn’t use any. And it didn’t need it at all.
I was a little nervous at first because the recipe made it sound like the chocolate had to be the exact perfect temperature or everything would not come together right, and double boilers are already not my strong suite.. Turns out, I either happened to get it perfect or it just doesn’t matter as much as they made it sound because everything missed together perfectly well.. I was also worried about the amount of beating of the egg whites because I wasn’t sure if they were getting fluffy enough. Again, it seems like it worked out well even if I wasn’t sure if it was really peaking quite enough. Basically what I learned was that chocolate mousse is not as terrifying as it may originally seem. Just do what the recipe says to the best of your ability and voila, it magically comes together.
The whipped cream on top was a whole different story. I didn’t have any heavy whipping cream left so i tried using light cream, which basically never quite whipped up. With a little whipping cream whipped up and dolloped on top and then a shaving of chocolate.
