best bread ever


I decided to make bread on Sundays. There is nothing better than fresh homemade bread. It just makes me happy. And then you get to eat it for the rest of the week, for toast in the morning, sandwiches, a side with dinner, snacks-- everything! And its just such a cozy thing to make, especially in the winter for some reason. It also makes me feel old fashioned, creating one of the staples of my diet with just flour and water and an egg.

Anyways, last Sunday was the first time I have done it since Ive been back in my apartment after winter break. I made the most delicious bread ever too, completely out of luck. Not only did I not have any yeast and therefore have to search for yeastless bread recipes, but I dont even own a bread pan. So once I made the dough I just added a little more flour until it would sit in a ball without spilling away from itself and baked it on a baking sheet. Because of this I had to guess about the timing of baking, since without the metal against the sides and because of the different shape I knew it would not necessarily take the same amount of time to bake all the way through. I just got lucky. It ended up perfect. I just kept checking it once about a half hour had gone by and took it out when it looked browned and sounded fairly hollow when I knocked on the top. My mom always says that it continues cooking after it is out of the oven, so I took it out probably even a little sooner than I could have. It was moist and cakey and delicious, but once it fully cooled and had sat a few days it got a little crumbly which I think was due to

slightly undercookedness. Yet I would make it exactly the same way next time

again :)

1 cup plus 2 tablespoons old-fashioned rolled oats, or quick-cooking (not instant) oats, divided

2 1/3 cups white whole-wheat flour (or use half white, half whole-wheat flour)

2 1/4 teaspoons baking powder

1/4 teaspoon baking soda

1 1/4 teaspoons salt

8 ounces (scant 1 cup) plain yogurt

1 large egg

1/4 cup canola oil

1/4 cup clover honey, or other mild honey

3/4 cup milk
