Made some pasta tonight with some random stuff I had hanging around. Wasn’t entirely planning on cooking but it was such a beautiful day and I was sitting outside with the boy when he suggested we go home and make dinner. It sounded like the perfect way to end such a nice day so obviously I agreed. Since I hadn’t gone shopping especially for ingredients, and honestly haven’t been to the grocery store in sort of a while, I just used what I had, which wasn’t much. Half a can of leftover diced tomatoes, and some grated parmesan that I wanted to use up before it dried out. And of course some mascarpone which I always have in the fridge. Some oregano and italian spices of course, along with garlic powder– only because my roommates locked the real garlic in a zip lock bag and it rotted and I forgot to get more– completed the sauce. Sprinkle with extra freshly grated parmesan and there you go. Got the seal of approval from the boy, although I know it was not at all a weather inspired meal. I can’t wait until the real tomatoes ripen, and will definitely miss being home this summer and being able to pick them right out ofthe garden. I’ll make something a little more summery tomorrow perhaps!
