Special Cinnamon Buns


I made this recipe once before on here I think, but I’m sure the post didn’t do it justice. I made it again recently and decided to post it again, because it’s just that good.

I love my big brunchy breakfasts on the weekend. I am usually quite the pancake girl- I can hardly ever pass up pancakes if given a choice. I always head to the local brunch spot with all intentions of trying an omelet or even French toast. But no. As soon as pancakes pop up on the menu (and they always do) that all goes out the window. And even if I have time to make a nice leisurely breakfast at home it always ends up being pancakes if anything. There is just no way for me to resist. Until I met these cinnamon buns.

Last weekend I babysat my cousins at their house. I always like doing this for two reasons: I like to spend time with them of course, and it’s fun to play house in a real house once in a while. With a real kitchen. And a real family. On Saturday morning we woke up late and me and the youngest cousin set to work making some delicious (surprisingly easy) cinnamon buns. They feel so much more special than pancakes, and so much more luxurious. I think I want to make them again for valentines day.

Here’s how.

Heat the oven to 425 degrees and butter a 9 inch round cake pan.

{Combine}

¾ cups brown sugar

4 tablespoons granulated sugar

2 teaspoons cinnamon

and 1/8 teaspoon salt in a small bowl.

Add 1 tablespoon melted butter and stir. Set aside.


{Mix}

2 ½ cups flour

2 tablespoons sugar

1 ¼ teaspoons baking powder

½ teaspoon baking soda

and ½ teaspoon salt in a large bowl.


{Whisk Together}

1 ¼ buttermilk (or regular milk if you don’t have it) and

2 tablespoons butter and then add to the dry ingredients and stir with a wooden spoon. Then knead on the counter until smooth.

Roll it or shape it into a 9 inch by 12 inch long rectangle and spread the sugar mixture on top. Leave a little space around the edges so that when you roll it up it sticks. Press it down so it won’t fall off and roll the dough into a log the long way. Cut it into 8 even slices and place them in the pan with one in the middle and the rest around it like a flower. Brush with another tablespoon of melted butter.

Bake about 25 minutes. Take out and allow to cool a little before inverting onto a plate.

If you want to make a glaze (which they don’t really need but it never hurts!)

{Mix Together}

2 tablespoons cream cheese with

2 tablespoons milk and add

1 cup of confectioners sugar. Drizzle over top.
