pasta carbonara

My parents gave me this cookbook for Christmas called Poor Girl Gourmet.(It's actually based on a blog which can be found here) Nothing like knowing your parents know you are too broke to make good dinners and instead of giving money for Christmas they give you a cookbook of cheap food.

I joke. I really truly love this cookbook. It has great things and pretty pictures. Tonight I decided to make pasta carbonara because I was at the store the other day and saw pancetta which I obviously never just have laying around when I want to make something like this. So I got some and then had to make it!

Also when I was in my friends dorm a few weeks ago my other friend who lives down the hall was making it and it seemed super easy (it is!) and delicious and just reminded me how much I love it and always want to make it.

Super easy, just need:

pasta (duh)

eggs

parmesan cheese

pancetta

pepper

Cook the pasta until al dente. Also cook the pancetta.

Meanwhile whisk up the eggs and add pepper and parmesan cheese.

Save 1/2 of the water from the pasta and slowly pour it in to the eggs while constantly whisking. This makes the eggs get used to a warmer temperature and not cook and turn scrambled when added to the pan. Then add the pancetta to the drained pasta and then the egg mixture also. Add more cheese and pepper on top once plated.

Delish.
